It is a complex lipid comprising of triglycerides, free fatty acids, phospholipids, sterols, sterol esters, fat soluble vitamins, carbonyls, hydrocarbons, and carotenoids. Cow milk ghee is made of 99 to 99.5 percent of fat, less than 0.5 percent of moisture, 3.2-7.4 mg/g of Carotene, 19-34 IU/g of vitamin A, 302-362 mg/100g of cholesterol, 26-48 mg/g tocopherol, and 2.8% free fatty acids.
